Founded by Nick Haddow in 2003 after extensive global cheese-making experience, the company uses traditional methods and seasonal organic milk from rare-breed cows in the Huon Valley for distinctly Tasmanian character.
Products
- O.D.O. – Stands for One Day Old, this simple curd cheese is lightly salted, drained overnight, then marinated in olive oil with garlic, chili, black pepper, and chives—ideal as an antipasto or pasta topper.
- 1792 – A pungent washed-rind cheese aged on Huon pine and often wrapped in vine leaves. With roots in traditional French methods, it matures into a smoky, complex flavor profile.
- Raw Milk C2 – Australia’s first raw milk cheese, matured for 6–12 months, with a sweet aroma and mildly nutty taste. It's a classic cooked-curd cheese in the style of Alpine traditions.
